Cookie Exchange

Our annual cookie exchange. I think this year we had about 14 people participate. Each participant brings a dozen cookies for however many people that participate. You can imagine how many cookies everyone gets to take home. I made my usual Linzer Augen - a traditional Austrian cookie. However, since I didn't have time to make 14 dozen of them I just brought them for everyone to nibble on. They are always a hit. I promised the recipe, so below you will find the "americanized" recipe in cups and spoons rather than grams and kilograms. Enjoy!

LINZER AUGEN
4 cups flour 1 tsp. vanilla 4 egg yolks
1 1/2 cups powdered sugar 31/2 sticks of butter apricot jam (traditional) or any other
Mix all ingredients together with a Kitchen Aid. Let dough cool in fridge for 1/2 hr. Roll out dough into a thin 2mm layer and cut out rounds. Cut out a hole in half of those rounds. Bake at 350 for about 12 minutes. Spread jam on the backs of the whole rounds and place the rounds with the hole on top. Sprinkle with powdered sugar and ENJOY!! (They are best when left in a zip lock bag overnight.)
